Pasta Perfection!

Hi everyone. Hope you're all having a fantastic day! It's another dull, gray and sad day here in Ohio. I think Mr. Funky Winter Gloom is all settled and nestled in for the duration. SIGH! I miss the sunshine already! People around these parts get all crazy under these dreary skies. It's like insanity thrives in this environment!

Okay, enough about that. On the FOOD! Breakfast was so tasty. I had a cup of coffee and......
  • 1/2 cup oats
  • 1 cup water
  • dash salt
  • dash cinnamon
  • dash pumpkin pie spice
  • 2 tbs fat free strawberry preserves
  • 1 banana, sliced


Yep, that hit the spot juuuuuust right!

Lunch was equally DELIGHTFUL! I forgot to mention this but I was up late last night and while watching TV, I was roasting an Acorn squash and some egg white dipped, bread crumb covered eggplants in the oven. Oh man, that was such a good decision! I packed both for lunch. I had the eggplant rounds as a wrap with some spinach. Simple, fresh and delicious! I had the squash on the side.


Getting my veggies in for the day, that's for sure.

For a break today we visited Aldis for some fresh produce. Can't beat their prices. They don't carry everything I need, but what they do have is cheap as heck! I loaded up on a ton of veggies and fruit! Then it was back to work "paradise" for a few more hours.

For my afternoon snack I enjoyed another blueberry wheat muffin from Trader Joe's. I microwaved it for 30 seconds and sprayed a few squirts of spray butter on it. MMM. I liked it warm!!


I was SO HAPPY when 5:00 rolled around. We hit the gym determined and motivated! YEAH!

By the time I got home, I was ready to relax and unwind! I walked in and was greeted by this LOVELY sight!


The people at Chobani are so amazing!! They sent me a sample pack of their Greek yogurts to try! The package arrived before Nick left for work and he put them all in the fridge for me. I can't wait to taste them ALL! They sent me nine scrumptious flavors to try. Plain, Fat Free Plain, Honey, Blueberry, Strawberry, Pomegranate, Pineapple, Peach and Vanilla. I'm most excited about the pineapple and the pomegranate. YAY!

After I cleaned my messy self up I pondered over dinner ideas. I was craving Pasta which is something I hardly EVER have! I didn't want to add any sauce to keep it low calorie, simple, fresh, healthy. Sooooo, after much deliberation, I tossed the following together in hopes that it would magically turn out delicious!
  • Box of whole wheat rotini pasta, cooked and drained
  • 2 cups broccoli, steamed
  • 2 cups yellow squash, steamed
  • 1 cup sugar snap peas, steamed
  • 1 cup oven roasted mushrooms, chopped
  • 12 oven roasted cherry tomatoes, cut in half
  • Half of a roasted red onion, chopped
  • 6 cloves garlic, roasted and mashed
  • 8 black olives, chopped
  • 1 tbs bacon bits (just a DASH of badness will do ya)
  • 2 tbs spray butter
  • 1 tsp red pepper flakes
  • 4 tbs parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp dried chives
  • 1 tsp cayenne
  • salt and pepper to taste


WOW, this was DAMN GOOD yall! Nick and I slammed. In moderation of course! I don't eat MASSIVE portions anymore. I also WEIGH IN tomorrow morning. I don't need a gut full of pasta weighing me down. HA! Wish me luck. I'm nervous, as usual. I've lost a total of almost 10 pounds just in the last three weeks alone. Total loss to date is 23 pounds in 90 days. Hopefully I can keep the momentum going.
