Skippin and Trippin...

Wednesday is almost over... Can we please have a moment of silence to celebrate?

I was going to think of something clever to compare today to, but then realized that NOTHING could capture its "essence" accurately. I can assure you that there are NO words to describe it. None that would be recognized in the English dictionary that is. I will instead leave you with the wise words of my Hungarian ancestors. Kurva rosz volt a mai nap. Translation will not be provided but I'm sure you can use your imagination. ;)

BREAKFAST (meal #1) at 9:15am.
  • 1/2 cup old fashioned oats
  • 1/4 wheat bran
  • 1 1/2 cup water
  • 1 tsp cinnamon
  • dash pumpkin pie spice
  • pinch salt
  • Splenda
  • (Microwaved and topped with 1 tbs ground flax, 2 tbs sugar free raspberry preserves, 1 tbs Better N' Peanut Butter.)


I loved the raspberry jam with the oatmeal. So much better than the cherry. YUM!

I'm pretty sure that online document retrieval websites were designed by the devil. I could hear him laughing wickedly as I clickety clicked through hundreds of pages. Mind numbing repetition is SO awesome. Locate, view, save, print, repeat. Weeeeeeeeeee!

LUNCH (meal #2) at 1:00pm.

I ate lunch later than usual. I was in a "must finish downloading" trance and found it hard to stop. It was like tripping (not that I know what tripping is like) on the stench of hot paper as it poured out of my printer. I was obsessed with getting it done so that I could move on to something else. ANYTHING else. I worked right through lunch without a break. I had no time for such idle fantasies today.


I used up the leftover veggies from yesterday which made for a quick and tasty lunch. I had an asparagus and laughing cow cheese sandwich on an Ezekiel whole wheat bun.


I also had roasted broccoli on the side with Sriracha for some spicy dippage.


Locate, view, save, print, repeat. Locate, view, save, print, repeat. Weeeeeeeeeee!

The day flew by today. 4:00pm rolled around and I was still clinging to the now unrealistic hope of getting caught up before 5:00. My now COMPLETELY NUMB ass was glued to my chair all day long. Ann was nice enough to fix me my afternoon snack. LOVE YOU ANN! There was no way I could have stopped long enough to make it. It gave me FUEL to power the now raging fire that was burning inside. My inner voice was screaming "finish... finish... finish..."

SNACK (meal #3) at 4:30pm.
  • Plain Dannon Greek Yogurt
  • Braeburn Apple
  • Cinnamon
  • Udi's vanilla granola


Sadly, I wished Ann farewell as she left for the gym at 5:00. I decided to skip the gym. I had way too much clickety clicking left to do. The way I saw it, either I stay late tonight and get somewhat caught up or deal with the same POOP tomorrow. It's easier to get caught up after 5:00 because the emails slow down, the phones stop ringing and the office is empty and quiet. BAH! I HATE skipping a workout though!! I stuck around work until about 6:30 and then called it a night. I came straight home, made a nice cup of French Press coffee and relaxed on the couch for a bit. Taking a couple of nice, slow, deep and long breaths, I instantly felt better. Coffee woffee, I wuv yew.

DINNER (meal #4) at 8:00pm.

I decided to dabble with a different take on low mein. Ladies and gentleman, I give you......

Vegetable Pot Sticker Pasta
  • 1 bag tri color slaw mix
  • 1 cup sugar snap peas
  • 1 small onion
  • 2oz (dry) Bucatini pasta (tick spaghetti type noodle that's hollow in center)
  • 2 tbs Soy
  • 2 tbs Teriyaki
  • 1 tbs Fish Sauce
  • 1 tbs Spicy Thai Chili Paste
  • Dash Ginger powder
  • Lots of black pepper
  • Pinch salt
  • 1 tbs Better N' Peanut Butter
  • Drizzle Sweet Thai Chili Sauce
I cooked the pasta as directed.

While the pasta was cooking, I tossed all of the other ingredients (minus PB and Sweet Thai Chili Sauce) into a large saute pan with a lid and simmered it on low until all the veggies got nice and tender. When the pasta was done, I tossed it in with the veggies, added the PB and gave it a good stir. I made myself a nice heaping bowlful and topped it with a drizzle of Sweet Thai Chili Sauce. MMMM. This was tasty.


If I would've had more veggies at home (broccoli, mushrooms, peppers etc...) I would have tossed those into the mix as well. It was good just as is though.

I just poured myself another cup of coffee and it's nearing 10:00pm. Crazy? Perhaps! However, the later I stay up tonight, the more time I have to enjoy my sanity before "Locate, view, save, print, repeat." tomorrow.

HAHAHAHAHAHAHA. I'm losing it! LOVE YOU GUYS! Thanks for listening to my rants.
