Girls Just Wanna Have Fu-hun!

I took relaxation to a whole new level yesterday and decided NOT to post last night. SAY WHAAAA? This is UNHEARD of for me! I just needed a night to myself. One which did not involve opening my shiny, bright, little magical box of electronic laptop wonder. IT FELT GLORIOUS!

My Saturday was glorious and perfect in every way. Reeeeeeeeeeeeeeewind.

BREAKFAST (meal #1) at 9:30am.

I slept in till 9:00. LOVED it! I celebrated with a lovely cup of coconut macaroon coffee. See me waving? HA!


I also had two open faced spinach, egg white, ham and cheese sandwiches on wheat bread.


After breakfast I changed and met Ann at the gym to get a good workout in. I was craving it bad. I hate missing a day during the week and as you all know I missed Thursdays' workout due to work enslavement. I was ready for a good SWEAT session.

After our workout we ran to feed Mama and Papa Babushkas cats and tidied up their house a bit. We're talking cleaning like maniacs. Once we started we just couldn't stop. Papa, if you're reading this, SHHHHHH, don't tell Mama. I want it to be a surprise. HA! :)

I know I said yesterday was relaxing and it seems like all I've done up to this point is workout and clean. Don't worry, it's about to get WAY better. AND I enjoyed my workout and cleaning. SO THERE!!!

SNACK (meal #2) at 2:00pm.

When I got home I had a quick snack of plain Dannon Greek yogurt, Nature's Path Crunchy Maple Sunrise cereal and a drizzle of Kodiak Cakes raspberry syrup. DELICIOUS!


I also took a nice long bubble bath. My leg felt a bit stiff from my little run and the hot bath felt amazing. Afterwards I got ready and left to spend the rest of my afternoon over at Annie-Boos' new apartment. We had planned a serious GIRLIE evening together. It was just what I needed.

Loved the bottle, did NOT love the wine. Not a fan of Oaky wines. Overall, not bad, but not great...

Notice the BAD KITTY Pajama pants? HA! Ann was hardcore lounging. Naturally, the awesome pants were a present from yours truly! LOVE IT!

The next few SHOCKING photos can not be explained. It's just something we do when we get together.... and wine is involved.... It seems to happen EVERY time! HAHAHAHA!

Our evening ACCIDENTALLY ended at the Mexican restaurant around the corner from Ann's apartment. We had fresh, warm tortilla chips with awesome hot salsa and raspberry lemonade.

And sadly, when our food came out, I was SO EXCITED that I dove right in without even thinking of taking my camera out. :-o

I had what I always have when I find myself being NAUGHTY at a Mexican restaurant. The Chicken Quesadilla Fajita. Ann got 2 chicken and 2 beef Flautas. We split our meals and shared. I ate maybe 60% of everything and felt like I was going to EXPLODE! It hurt so good! The food was delicious!!!

After dinner I dropped Ann back off at her apartment and drove home. I IMMEDIATELY changed into my pajamas and crashed on the couch. Nick and I attempted to watch a movie but I passed out after about 20 minutes. He woke me up and I went straight to bed. It was such a great day!

Calendar Coma

It's Friday haaaay! So exciting! I love Fridays! Well it's time to fess up and confess my sins for the week. Good thing I've been a good girl aye?

Here is the official weekly update of my 2010 goals for your reading pleasure. I'm only going to touch base on the IMPORTANT ones.

Weight loss - I only lost 1 pound this week. But I'll take it. I was initially angry but now that I've had time to reflect on it, any weight LOST is a step in the right direction. This brings my total weight loss to 34.1 pounds.

Water consumption - This is still going good. I average between 75oz - 100oz a day.

New Recipes - I tried one last night and it turned out great. I also dabbled with hummus earlier in the week. So yeah, this goal is going great. I plan to make some new delicious eats this weekend as well. YEAH!

More cardio and ab workouts - Going good. I try to do a bit of cardio with EACH workout and abs at least 2x a week. Not bad.. Not bad at all.

And there you have it. I think I'm doing pretty good! Wave your stupid stick of laziness and fatty food temptations in front of me all you want. I WILL NOT CAVE! NEVAH!


Now let's talk about some food! Breakfast was... Well you already know what it was don't you? :)
  • 1/2 cup oats
  • 1 cup water
  • 1 banana, sliced
  • 1 tbs PB2
  • dash cinnamon
  • dash pumpkin pie spice
  • dash salt
  • Splenda to taste


This stuff just makes me smile! So good!

You know what else made me smile? My Lunch! HA! (I was bored)


It was leftovers from last nights dinner, sans the PB2 I stirred in at the end, rice noodles or chicken. It was just the cabbage and broccoli mixture which I sauteed in soy sauce, Thai chili paste and oyster sauce. On the side I had an "eye popping" hard boiled egg for some protein and a light FlatOut wrap sliced into wedges.

They made for the perfect scooper.

This stuff had me FULL FOR HOURS! So full in fact that I never had my scheduled afternoon snack. Which was to be a yogurt mess. There was no way I could eat it though. I was STUFFED!

For the first time in AGES I was able to drive straight home after work. Since I'm changing my regular grocery shopping day from Friday afternoons to Sunday mornings my afternoon was free. FREEDOM IS FANTASTIC! Sometimes I feel like a prisoner of my own set schedule. The same routine, week after week and it HARDLY ever changes! In a way I like the simplicity of knowing what's next but sometimes I just feel TRAPPED! Do you ever feel like that? Like you're in a calendar coma and you can't see past it? Wake up, work, workout, clean up, cook dinner, blog, sleep, repeat. That's my day 5 times a week. HA!


As soon as I got home I grabbed my new obsession (espresso maker) and brewed a nice cup of caramel flavored coffee. I am in LOVE with this amazing little $7 dollar find!


It makes the best coffee I swear!


Maybe I should get a French press next? You know, to cover all my coffee obsessed bases and compare the flavors. HA! As I said before, I have a coffee problem. It's my all time favorite drink. Followed by fine wine, of course!

I tossed in a load of laundry and then vegged out on the couch for a while while sipping my yummy beverage of choice. It was SO nice to relax.

When dinner time rolled around Nick and I started prep on the usual Friday SENSATION! Taco Salad. You can find the recipe I follow for my "no meat" version ***HERE***. I used cannellini beans in place of black beans this time though.


I enjoyed a few delicious Food Should Taste Good (The Works) chips with dinner as well. I stacked them all pretty like around the bowl. YUM!


After dinner I was gawking into my fridge to get an idea of what we needed from the store. Sadly I realized that I was almost out of Oikos again. OH THE TRAGEDY! I hope I find some at Trader Joe's tomorrow. Do they even carry it? I'm SO EXCITED to go. The plan for tomorrow is to get to the gym SUPER early, clean up at Ann's place, grab a late breakfast while there and hit the road by 11:30 at the latest. I bet I spend a small fortune when we get there! Scared... Maybe I should set myself a limit? NAH! ;)

Catibalism

Why hello there. Happy Tuesday! It is Tuesday right? My days are starting to blend together since I haven't been to work since the 23rd. Jealous? MUWAHAHAHA (evil laugh). ;)

Today started out with a tasty little breakfast. I made a quick egg white scramble with 4 egg whites, bunny sea sat and black pepper. The bunny rabbits kept lingering after their work was done. Sneaky little wabbits!


On the side I had a banana and a slice of French Meadow Bakery cinnamon raisin bread. BY THE WAY, I've been so busy with Christmas that I forgot to share with you the wonderful package I received from the very friendly folks over at French Meadow Bakery. They sent me 3 delicious loaves of bread and some bagels.


I was SUPER excited to receive these goodies and I have been dying to try them. So today, I did! The Cinnamon Raisin bread was dense, rich, filling and delicious! The stats were excellent too.


Even though the slices are smaller, they are jam packed with goodness and very flavorful. This slice gets a 10 out of 10. It was excellent!


After breakfast I changed into my gym clothes and met Ann for a great workout.

This workout left me feeling good, but a bit whooped. I crashed on the couch as soon as I got home and ended up sitting there for about an hour and a half. For some reason I never eat right after a workout. Not sure if this is a bad thing or not. ???

When I did finally get hungry I had a wonderful salad with more egg roll stuffing leftovers. Egg Roll Salad? Sure, that sound like a good name to call it. It was delicious. Here is what went into the mix.
  • Baby Arugula
  • Sweet Butter Lettuce
  • Green onion
  • Black beans
  • Egg Roll Stuffing (You can find the recipe ***HERE***)
  • Spray butter
  • Chili sauce (egg roll dipping sauce)


Oh man, the salad was delicious! You will never believe what I did after I finished lunch. I CLEANED SOME MORE! Yeah, that's right. I'm LIVING ON THE EDGE ON MY WILD VACATION WEEK AWAY FROM WORK! HA! With Nick working this week, I finally had a chance to clean his office. I had to do it!! IT NEEDED DONE! I'm forbidden to go in there and touch anything and the room is covered with dust, papers, receipts and "electrical man toys". Forbidden or not, I was going in there today to clean that sucker. He was at work which meant he wouldn't be able to stop me. HAHAHAHA!

After the office was done (WOW, that was fun) I walked past the bedroom and came across this vision.


OMG. Mr. Oliver is such an adorable, mean little bastard. I mean, just look at this SUPERMODEL!


I could just eat him. I'm fighting all urges to nibble on his cute little fuzzy face. OLIVER! I WANT TO EAT YOU! YOU'RE SO CUTE!!!!!!!! HA!

Once the cat supermodel posing session was over I dove in and cleaned the bathroom as well. The ENTIRE house is now officially clean and this makes me GIDDY with excitement. YEAH!

After the cleaning session, I was left with about an hour before Nick got home from work. Relaxing, girlie, bubble bath time. It was a nice way to end the afternoon!

When Nick got home he surprised me with a last minute invite to go visit his mom with him for dinner. This meant EMERGENCY COOKIE BAKING TIME! I purchased a little something for his mom for Christmas already which I planned to give to her the next time I saw her. However, the plan was to bake some cookies for her boyfriend for Christmas as well. Nick inviting me at the last minute meant I had to bake the cookies right away.

Kodiak Cakes to the rescue!


I quickly grabbed the box of Oatmeal Dark Chocolate Chip cookies and went to work. The recipe was SUPER easy. It called for a stick of butter and one egg, that's it. BRILLIANT! I had the batter ready in no time and into the oven they went for 10-12 minutes at 350 degrees. I let them cool on a cookie rack for 10 minutes and packed them up in a cute little basket. Done and done.


His mom was making the usual FATTY "I can't have" type dinner again so I packed up some leftover Stuffed Pepper Soup to take along as well. Good thing I made extra yesterday! I also packed up two slices of French Meadows Bakery, Spelt Bread to have with the soup.

Dinner was delicious! Once again the bread was brilliant and dense. Heavenly little slices of goodness! :)


His mom loved the craft beads I got for her. She makes her own jewelry and metal crafts so it was the perfect present in my opinion. Her boyfriend LOVED the cookies as well. He kept moaning while eating them. HA! They were CLEARLY delicious! I was going to try one but never got the chance. The soup and bread had me stuffed!

By the time we got home it was nearing bedtime but I wanted to post this before I called it a night. I'm very sleepy tonight for some reason!

Tomorrow is going to be a fun day with Sis! We're going shopping and having Sushi. I haven't had sushi since June or something crazy like that. I CAN'T WAIT!
