I Profess Success!

Hap-Hap-Happy Friday-haaay everyone!! I'm in a super good mood today. I bet you're dying know why, right? Well wait no longer because I can't wait to share my good news with you. I LOST MORE WEIGHT! I'm down another 3.9 pounds. Do you realize what this means? I met my personal goal to lose 30 pounds before the end of the year. I have officially lost 30.3. YAY FOR SUCCESS! I could just shriek with joy and pride. AND I still get to weigh myself three more times before the year is over so who knows what the final end of the year total will be. I'm just so happy right now. The last few weeks have been tough. Me and Mr. Scale were NOT getting along. I started my journey to live healthy again on August 1st. I now feel fantastic, look better and most importantly I'm living a healthy and active lifestyle.

Now on to my favorite topic. GLORIOUS food!

Breakfast was the very delectable oatmeal blend knows as "Paradise Oats".
  • 1/2 cup oats
  • 1 cup water
  • dash salt
  • splenda to taste
  • lots of cinnamon
  • 1 banana, sliced
  • 2 tbs sweetened coconut flakes


Shhhh. Do you hear that? The ocean is right outside my office and sounds louder with each bite I take of this ridiculously tasty, tropical inspired treat. Oh yeah, AND it's good for you.

Lunch consisted of a turkey and green pepper sandwich on rye bread and a mix of baby carrots, tomato wedges and pickles on the side. I haven't had pickles in so long and I have NO idea why. They were SO good!


I also tried this chocolate Green Super Food from Amazing Grass mixed with just water for some kick. Not bad...


A tad bit "too textured and gritty" for my liking. I love the mix in shakes and smoothies. Not real sure that it goes all that well with just water.


We decided to really LIVE IT UP on our break away from the office today. We very excitedly drove around the corner to the grocery store. HA! What can I say, I just wanted to get my usual Friday grocery shopping done early so I could go home right after work. I haven't been able to go straight home after work in months! It's either straight to the gym or to the store. So yeah, with massive lameness I pranced around the store getting my usual goodies. I love grocery shopping!

When we got back to work I found myself having a whirlwind love affair with emails. WHEW! Getting through them all distracted me so much that I completely forgot to eat my afternoon snack. BAH! By the time I got caught up it was time to go home. WOW. Where did the afternoon go?

I got home, put the groceries away, loaded up the dishwasher, fed the cat and poured myself a lovely glass of this Riesling. A friend left it at my house a few weeks ago and I have been eyeballing it every since. Tonight seemed like the perfect night to indulge a bit. To celebrate my weight loss if you will. It was tasty with a nice, crisp, clean and fruity flavor. Very good.

I also checked the mail only to be pleasantly surprised by a lovely box of goodies from Kodiak Cakes. I received a box of cake mix, brownie mix and pancake/waffle mix. They all sound so delicious. I also received a jar of raspberry sauce. I can't wait to dabble in a bit of baking and try all these goodies. I'm not a baker by any means but I like to pretend that I'm good at it around the holidays. Perfect timing I guess! :) THANKS Kodiak Cakes!!


After relaxing for a bit with my wine, my kitty, my Mr. and my laptop, the stomach started yelling at me. I think the lack of an afternoon snack was catching up to me. Time for TACO SALAD NIGHT! I never get sick of this stuff! Nick and I had dinner done in about 20 minutes. Perfect! You can find the recipe for my Healthy Vegetarian Taco Salad **HERE**.


So yummy. The Avocado was perfectly ripe. In case you weren't aware, I ABSOLUTELY LOVE Avocados!

After dinner I decided that coffee sounded good. I realize it's late but who cares, it's Friday! Lately I have been obsessed with this "Knickerdoodle" flavor. SO GOOD!

I'll admit that I have a slight coffee obsession. Check out my stash. Trust me, there are about 3 bags that aren't even visible. :)


Now it's time to do some serious recipe searching online. Our office Christmas party is next Friday and I plan to bring a tasty treat. In the past we used to have a catered Christmas party at this lavish and stuffy country club. Due to the economy, this is no longer the case as of last year. We now have them at the office which is just fine by me. I've never been into the whole country clubbing scene. Management provides the main dishes and everyone else brings a little something to share. I plan to make healthy pumpkin cheesecake bites and I have a recipe in mind. I just want look online to make sure that there isn't a better (healthier) recipe out there that I haven't discovered yet.

I'm off to internet recipe land and then we have plans to watch Inglourious Basterds later. Should be good! Ta ta for now... ;)
