It's the hap - happiest Season of all.

COMMENCE the countdown!!!! TWO days left of work. THREE days until Christmas Eve with the folks. FOUR days until Christmas morning with Nick and Ann. OMG! I can smell the sugar plum, cinnamon spice covered magic in the air already. Can you smell it? Well wait, maybe that's my breakfast. EITHER WAY, I CAN'T STAND IT!

I was jamming out to my beloved Christmas songs at the office today. You know, to get into the mood and to try and make the day go by faster. It's hard to get upset or stressed over work with CLASSY lyrics such as....

Don't want a doll, no dinky Tinker Toy. I want a hippopotamus to play with and enjoy... (I LOVE THIS STUPID SONG!)

I hummed along with a smile on my face while I enjoyed a warm bowl of cinnamony oats and cup of coffee.
  • 1/2 cup Irish oats
  • 1 1/2 cups water
  • dash salt
  • dash cinnamon
  • dash pumpkin pie spice
  • 1 banana, sliced
  • 2 tbs sweetened coconut flakes


I Fa La La La Laaaa, La La La Laaaaaaaaaaaaaaaaaaaaaaaaaa'd my way straight through the morning and it was lunchtime before I knew it. SADLY and TRAGICALLY I forgot to grab my Morning Star Farms black bean burger out of the freezer this morning so I was stuck with a sad little salad for lunch. DANG IT! At least there were some leftover veggies (peppers, cherry tomatoes and carrots) from the office party last Friday so I tossed those on top instead. I also toasted up an english muffin and had that on the side. As usual, the dressing was just a bit of spray butter. It wasn't so bad after all. Sorry for the sad tupperware bowl. I forgot my plate at home, which was accidentally taken home last Friday.


For our break today Ann and I went to Macy's AND Target. We were rushing around like crazy people. She had to exchange something at Macy's and I had to grab some large Christmas bags from Target. This way I can finish all of my wrapping/bagging. SO EXCITING! I can't WAIT to be done!

Work was sort of quiet today. Yes, I WAS shocked at this phenomena. I was expecting it to be a hectic week which is very typical every year before Christmas. Needless to say it was a pleasant surprise. I celebrated with an afternoon snack. Oikos plain yogurt with a honeycrisp apple, cinnamon and splenda. YUMMMMMMM!


When 5:00 rolled around we busted out of there and went to get our workout in. I think I'm getting addicted to my daily 30 minute cardio sessions. It's like crack. I shall call it "Sweaty Crack". Well, maybe not, that sort of sounds disgusting. I apologize. :)

Ohhhh feel the burn... Doesn't it feel GOOD!?!? You bet my sweet shrinking ass it does. ;)

I was craving a nice home cooked meal this evening like CRAZY. I think it has a lot to do with my odd dinner (if you can call it that) selection of "this and that" last night. On the menu this evening were roasted pork loin, green beans and mashed potatoes.

Spicy Roasted pork loin.

I rubbed the loin with the following mixture...
  • 2 tbs low sodium soy sauce
  • 1 tbs Thai chili paste
  • 1 tsp minced garlic
  • 1 tbs spicy brown mustard
  • pinch sea salt
I put the pork into a small baking dish, covered it with foil, pierced some holes in the foil and popped it in a 400 degree oven for 30-35 minutes.

While the pork was cooking I sauteed some green onions and a small yellow onion in a pan with more soy sauce, sea salt, black pepper and spray butter. When they were nice and cooked I added a bag of green beans and cooked them on low heat for about 10 minutes. OH it smelled so good in the kitchen. Voila, Asian style green beans.

And finally, and because it was getting late, I made a pouch of instant mashed potatoes. Don't hate me.

The sauce on the pork was SO GOOD! I'll be making this again. I've tried a lot of different ingredients on pork loins before and I think this has been my favorite so far. Maybe it was the addition of the mustard? No idea, but it was GOOD!

I decided to enjoy an after dinner nightcap a bit later. Made with unsweetened chocolate Almond Breeze, unsweetened cocoa, splenda and fat free whip. Sweet, frothy goodness in a cup. Delicious.


I'm off to curl up with the Mr. and watch some TV. Have a great night everyone!
