Pumpkin Crush

My perfectly gorgeous and lovely day started with sunshine..... mocha flavored coffee.....

a purring kitty cat..... blog reading..... HGTV watching and the absolute BEST bowl of oatmeal I've ever had!!!! I'm not even kidding. I kept seeing Irish Oatmeal all over Foodie Blog-land and I've been wondering what all the fuss was about. So I got me some of this at the store yesterday to try.


As you all know, I love me some gold old fashioned oats. However, I'm not at all opposed to trying a new variety. IT WAS A GOOD DECISION! I cooked it on the stove and it turned out to be so creamy and so YUM!
  • 1/2 Irish Oats
  • 1/2 cup water
  • 1/2 cup Vanilla Almond Breeze
  • dash salt
  • Splenda to taste
  • dash cinnamon
  • dash pumpkin pie spice
  • 2 tbs coconut flakes
  • 10g dried cherries
  • 10g yellow raisins
  • 1 tbs Trader Joe's Pumpkin Butter


It is now 9:30 at night and I am still thinking about this amazing breakfast.

After my Irish treat it was off to the gym for a serious sweat session. I looked like a MAD woman today. Wild, sweaty, bewildered, red and huffin and puffin. I really pushed it and it felt great! I think I just want another good weigh in next Friday. Trying to keep the good streak going I guess!

When I got home I quickly poured myself a second cup of coffee. I was freezing after leaving the gym and warm coffee just sounded too good to pass up. While I sipped on my coffee I starred wide eyed into my fridge trying to come up with a good plan for lunch. I needed something quick. I was so hungry all of a sudden! I decided to have a sandwich with roast beef, baby arugula, sabra roasted garlic hummus on a very tasty Ezekiel 4:9 sprouted whole grain bun. On the side I made a quick cooked tri-colored colesaw mix with beans. You can find the recipe for this mix on my Recipe Blog *HERE*. I topped the slaw mix with a little feta cheese. MAN. THIS LUNCH WAS SO YUMMY!


With lunch devoured and my tummy full I instantly felt better. I cleaned the house up a bit, played with some laundry and then took a quick bath to clean my messy self up. All of a sudden I was in the mood to SHOP! I delicately suggested that Nick should join me and by golly somehow it worked. He actually decided to join me. I went to a *SECRET* place to finish up Ann for Christmas. YOU'RE ALL DONE ANN! I BET YOU CAN'T WAIT TO OPEN UP YOUR AWESOME PRESENTS HUH? Well too freakin bad because you have 13 more days to wait. HA-HA-HA-HA-HA-HAAAAA!

By the time we got home it was nearing 7:00 so I immediately started on dinner. What to have WHAT TO HAVE? And then like magic, it came to me. I can use of the slaw mix from lunch and make a delicious brown jasmine rice dish. I also tossed in some portabello mushrooms. You can find the complete recipe *HERE*. Nick and I both devoured dinner. It was super delicious!


Now for dessert. Yeah, I was STILL hungry, just one of those days.... I decided to make another pumpkin treat. I am obsessed with pumpkin puree as of late. The stuff is SO SIMPLE to use and with barely any fat or calories, it definitely works for my diet. Here is what went into the mix.
  • 1 can pumpkin puree
  • 1 box fat free chocolate fudge pudding
  • 1 cup vanilla Almond Breeze
  • 2 packets splenda
  • 1 tbs unsweetened cocoa
  • 1 tsp cinnamon
  • 1 tsp pumpkin pie spice
  • 1 tsp vanilla
Yep, that's it. Ridiculously simple right? I scooped a bit into a small bowl and topped it with fat free whip and more cinnamon sprinkles. SO GOOD! I DON'T EVEN CARE!


Nick is sick of all my pumpkin shenanigans lately so he didn't partake in the deliciousness. Needless to say there is a LOT left and I will probably have more tomorrow. MAYBE EVEN TWICE! LIVIN ON THE EDGE!
