The day of the BeBe

Happy Sunday! I woke up at 7:00 thinking that I would have a nice and early start to my day. About five minutes later I realized that I forgot to change the clock last night and that it was already 8:00 o'clock. Bummer! I fumbled, stumbled and grumbled around the house in a sleepy haze. Must...Get...Coffee... I loaded up the French Press with a mix of raspberry macadamia and hazelnut flavored coffee. Another delicious blend! I had it with a splash of unsweetened vanilla Almond Breeze and sugar free creamer.


I sipped on this deliciousness while catching up on all the addicting blogs I follow. Foodie Blogs = Crack!

About an hour later the tummy was grumbling. I fed it's furiousness with a nice bowl of stove top oats.

BREAKFAST (meal #1) at 9:00am.

  • 1/2 cup old fashioned oats
  • 1/4 wheat bran
  • 1 cup unsweetened vanilla Almond Breeze
  • 1 cup water
  • 1 banana, sliced
  • 1 tbs cinnamon
  • dash pumpkin pie spice
  • 2 whole cloves
  • pinch salt
  • Splenda to taste
I simmered this on low heat for maybe 15 minutes until it got nice, thick and creamy. I topped it with flax, Better N' Peanut Butter, sugar free strawberry preserves and more cinnamon.


This bowl was SO filling. Almost too filling! I ate it though. I had to. Resistance was futile!

The rest of my morning was spent on a plethora of randomness. More laundry, dishes, vacuuming, feeding kitty, putting baby shower gift bag together, getting directions to said shower and getting ready. The shower was taking place from 2-6 at a hotel about 30-40 minutes away, assuming that I find it without getting lost! I wasn't sure about the snack/food situation so I decided to have a light lunch before taking off.

LUNCH (meal #2) at 12:45pm.

I had two spinach, egg white, Morning Star Farms sausage and Sriracha pita pockets. I decided to keep it light because I was still feeling somewhat full from my MEGA bowl of oats this morning.


I also grabbed an Amazing Grass berry whole food energy bar just in case the food options at the shower weren't of the healthy variety. I like being prepared! ;)


I hit the road at 1:20 to make sure that I got there on time. I'm notorious for getting lost! Somehow, magically and miraculously I found the place with no problems and was one of the first ones to arrive. People started pouring in shortly after my arrival and the festivities began in usual baby shower fashion. There were prizes, snacks, cake, adorable presents (MINE ROCKED! I don't even CARE!!) and an overload of ladies cooing over all the little details. All in all a lovely afternoon.


SNACK (meal #3) at 4:00pm.

While everyone slammed on cake and goodies, I devoured my bar. Good thing I brought it. It helped me resist cake, greasy potato, M&M and chip temptation. ;)

Here's mommy to be. The gorgeous and glowing Carrie. The lovely wife of Nick's best friend Blair (he did my tattoo and is brilliant).


I got home at about 5:45. Not bad, not bad at all. This still left me some time to enjoy the rest of my Sunday evening.

DINNER (meal #4) at 8:00pm.

Mama gave me some leftover chicken breasts on Saturday and I decided to make a quick chicken quesadilla for dinner. I stuffed a whole grain and flax Flat out with fat free shredded cheddar cheese, shredded chicken, corn, onions, chick peas and a sprinkle of taco seasoning.

I topped it with pineapple salsa, jalapenos, fat free sour cream and red pepper flakes. YUMMY! I also had a small salad on the side topped with hummus.


Time to go unwind with the DVR. I'm feeling like a lazy slug right now and my couch is looking more and more delicious with each passing minute.

Oh boy, I just wrote a comment and then my computer froze. Dang, technology hates me more than anything else. sigh...
Anyway, it looks like you had a fun party! The onesies are really adorable :).
That quesadilla looks so scrumptious btw!!
