Late start.

My day started off late today. Nick and I were up playing games until 2:00 am last night and I didn't wake up until after 9:30!! WOW! So much for getting to the gym early aye? I quickly brewed a pot of macadamia flavored coffee and started on breakfast. The bowl of oats I had yesterday was SO delicious that I just had to make it again. With a slight twist of course.

Blueberry Banana Custard Oats
  • 1/2 cup Irish oats
  • 1/2 cup vanilla Almond breeze
  • 3/4 cup water
  • 1 banana, sliced
  • 2 egg whites, whipped
  • lots of cinnamon
  • Splenda to taste
  • dash salt
  • Frozen blueberries (added at the end and only cooked for maybe 1 min)


SO GOOD! I sprinkled a bit more cinnamon on top. It was perfect! The sweetness of the oats and banana tastes delicious with the tart blueberries.

Nick also had blueberries for breakfast. However, his was in the unhealthy version of a blueberry toaster strudel that he was VERY excited about. Clearly! HA!


After my second cup of coffee I felt ready to GO.


I called Ann and we decided to meet at the gym at noon. I should mention that I was SORE AS HECK from yesterday. I'm guessing that it's from the long workout I had at home which was almost immediately followed with an hour long snow shoveling session. My entire body was sore! However, it was time to suck it up and workout. As you all know, I did not lose any weigh this past Friday. I want to give myself the best possible opportunity to have a good weigh in next Friday. If you want it bad enough, you WORK for it. So off to "work" I went. ;)

After the gym I came home and immediately started on prepping lunch. I really worked up an appetite! I made a quick wheat sandwich with pastrami, spinach and hummus. On the side I had freshly cooked edamame simply seasoned with sea salt.


I love edamame! After lunch I cleaned the house up a bit and then took a nice hot bath. My muscles were super sore from shoveling yesterday and the bath helped a lot! I was in there soaking for ever. I looked like a prune by the time I got out.

A bit later I got hungry again (???) and decided to make a Green Monster shake.

1 packet Amazing Grass, chocolate amazing meal
1 cup chocolate Almond Breeze
Splenda to taste
1 cup frozen strawberries
2 cups fresh spinach leaves

This rich, green glass of healthy goodness had me full for HOURS! YUMMY!

When dinner time rolled around Nick begged for Taco Salad. We ALWAYS have them on Fridays but for some reason we decided to have the pork loin last night. Of course I didn't argue with his request. I love taco salads. Especially with avocado and I had a lovely looking one at home that was just calling my name. My tummy is so full now. All I want to do is curl up on the couch and veg out. I'll end this quote with a lovely little quote though. ;)

We have been using wheatgrass in a lot of our cooking. We sprinkle it over pizza, cereal, and even ice cream. The sweetness takes away some of that bitter taste real wheatgrass has. It is loaded with nutrition and an easy way to get your daily vegitables.
