Never Ending Rambler

SWOOOOOOOOOOOOOSH! Where the heck did this day go? I just sat down to type up this post and it's already 11:30 at night. Good grief! Getting to bed before midnight now seems completely impossible. Like a forbidden fairytale of fluffy pillows. A slumber story too surreal to be true. Told by crazy womenfolk at night and only spoken in whispers. I'm currently visualizing my soft pillows, fuzzy blankets and the gentle hum of the squeaky ceiling fan as it lulls me to sleep. This post is going to be a quick one. Forgive me.

In typical Monday fashion, I woke up later than I should have, rushed around all morning and just barely made it to work by my usual time. Breakfast was immediately made to "awaken" the senses.

BREAKFAST (meal #1) at 9:00am.
  • 1/2 cup old fashioned oats
  • 1/4 wheat bran
  • 1 1/2 cups water
  • 1 tsp cinnamon
  • dash pumpkin pie spice
  • pinch salt
  • Splenda
  • (Microwaved and topped with 1 tbs ground flax + 1 tbs Better N' Peanut Butter + 2 tbs sugar free strawberry preserves.)

I also had a cup of coffee in my trusty MEGA cup. Yes, it WAS necessary!

LUNCH (meal #2) at 12:30pm.

Another stellar salad made its way to my desk today. I'm really loving salads as of late. I find myself eating one every single day.
  • Spinach
  • Morning Star Farms black bean burger
  • Homemade onion hummus
  • Bread & Butter pickles
  • Tomato
  • Broccoli
  • Sprouted sunflower seeds

I snuck in an unsweetened applesauce with cinnamon as well. Delicious!

After my salad settled, and after getting somewhat caught up at work, I decided to leave the office for a bit of shopping therapy. However, shopping therapy turned into "try on" therapy. I didn't actually buy anything but I tried on a ton of stuff. Comparable to smelling rich chocolate cake without tasting it. You still enjoy the aromatic tease of it.

SNACK (meal #3) at 4:30pm.

The usual trusty container of plain Dannon Greek Yogurt with a sprinkle of Udi's cranberry granola. Nope, I'm still not sick of it.

After work it was off to the gym. I won't lie, I was NOT feeling motivated today. I do what I always do though. I just got it done. As usual, I felt great afterwards and was glad that I did it.

I was going to attempt running again for a bit today but to be brutally honest, my body feels like it's breaking apart. HA! My legs feel like someone beat them with a bat. Sadly, I know it's from combining the usual rigorous lower body workout with the running last Saturday. Yes, I know, I only ran 6 minutes and this is silly. It doesn't take much though. My right leg (bum leg as I lovingly call it) is hurting. The other leg is fine. Tomorrow is another day and I'm not giving up!

SNACK (meal #4) at 7:15pm.

I made a super tasty protein smoothie when I got home with 1 cup unsweetened vanilla Almond Breeze+ 1 scoop vanilla whey protein powder + 1 frozen banana + 8 frozen cherries + sprinkle of cinnamon. Uhm.... crack in a glass people. SO good!

DINNER (meal #5) at 9:00.

Dinner on the other hand was NOT crack. It was barely past the so-so stage. So tragic. I sauteed up green peppers + carrots + broccoli + onions + radishes with spicy Szechuan seasoning, teriyaki sauce, soy sauce and hot Thai chili paste. It smelled amazing.... but it only tasted good enough for me to eat half of what was on my plate.

I also whipped up a quick spinach, hummus & avocado sandwich on a Thomas's everything bagel thin.

Sort of a throw together dinner if I do say so myself.

I remedied my sauteed veggie fail with a Fuji Apple treat. I love Fuji apples.

My favorite is the Honeycrisp apple but I haven't seen them in stores for over 2 months now. CONSPIRACY!

Well, my quick post turned into a regular, never ending rambler as usual. It's officially midnight and I'm going to bed!

NIGHT NIGHT!
XOXO

Monday sure did go by fast, I agree! I am going to have to pick up some more Better n' PB. I used to eat it all the time. I loved it, but haven't thought to buy it in a couple years now.

I totally agree about apples. LOVE fujis, but Honeycrisps are absolute heaven!! :)

So smart to listen to your body and take a break from running, there's always tomorrow! Bummer about the dinner, it looks delicious at least :)
