100th POST. YEAH!

This week is WHIZZING by I tell you! Swoooooooosh, almost over. I had a pretty good Thursday today. Work was mellow, food was tasty, mood was good and workout was excellent. A lovely day indeed.

AND THIS IS MY 100th POST! YAY!

Everything was covered in frost when I walked out of the house this morning. YUCK! Yep it sure was a cold morning here today but breakfast made me feel all warm and cozy inside.
  • 1/2 cup oats
  • 1 cup water
  • pinch salt
  • 1 tbs Trader Joe's cocoa powder
  • dash cinnamon
  • dash pumpkin pie spice
  • Splenda to taste
  • 1 cup blueberries
  • 1 tbs coconut
Tasteeeee. However, I think I like the coconut addition better with banana. The blueberries were a bit tart and it sort of threw the flavors off juuust a tad. I still enjoyed it though. With coffee of COURSE!


Lunch was also very enjoyable. I actually ran a bit late to work this morning because of it. I decided to cook up a SUPER FAST egg white and veggie scramble before I left the house. Bad decision I guess because it made me about 15 minutes late to work. I'm such a REBEL! It was well worth it though! I enjoyed this lunch very much!
  • 4 egg whites
  • 1 large mushroom, diced
  • 1 green onion, diced
  • 1 small tomato, diced
  • a little bit of green bell pepper, diced
  • salt and pepper to taste
I cooked it in a frying pan with some Pam. Easy as pie.... I tossed it inside a fat free tortilla (La Tortilla brand) and topped it with some hot mango habanero salsa. I also enjoyed a blueberry wheat muffin from Trader Joe's on the side. YUM!


I also enjoyed the black cherry pop from the lovely folks at Zevia that I received yesterday. It was good! Not too sweet and the cherry flavor was very good! I would buy this again, for sure! This pretty little pink can get a 9 out of 10.


We got several things accomplished on our break away from the office today. I got some gas. OHHH EXCITING!

Then we picked up some coffee creamer at the grocery store. WOW, THE EXCITEMENT OF THIS TASK IS IS BLOWING MY MIND!

Then we decided to go to Barnes & Nobles to grab a light latte and do a bit of healthy recipe reading. I went with a light hazelnut latte with skim, sprinkled with nutmeg and cinnamon. YUM!


While sipping I perused both of these love pieces of literature. HA!


I WANT THIS COOKBOOK! It had some great recipes in there!


Then it was back to work. For my afternoon snack I enjoyed a Double Chocolate Dream VitaTop from VitaLicious. HOLD THE PHONE! This was delicious! The best one yet in my opinion. It was so moist! The others I've tried were tasty but a bit dry, which was not the case with this one. It was chocolaty, rich, flavorfull, sweet and it felt like I was being naughty. BUT I WASN'T. BRILLIANT!


Ann gave it a 10 out of 10. She was raving about it and demanded more. Hey, I'm already sharing each flavor. Don't push your luck Miss thang! HA!

I also give it a 10 out of 10. It was so GLORIOUS!

After work it was off to the gym for some shoulder work and cardio. PUMP IT OUT!

WHEW! The workout felt so good today. OHH... FEEL THE BURN! I hustled home as quickly as I could. I found out during the day that we were invited to Canton to hang out with some friends this evening. I wanted to make sure that I had enough time to clean up and to make dinner before we left.

Pancakes sounded good. Because they are delicious AND because they are quick and easy to make.
  • 1/2 cup old fashioned oats
  • 3 egg whites
  • splash of vanilla Almond Breeze
  • 1 tsp vanilla extract
  • dash of cinnamon
  • dash of nutmeg
  • Splenda to taste
  • 1 banana, sliced
I tossed these into a blender and mixed until smooth. Then I cooked them in a large frying pan, sprayed with Pam. Just for a few minutes on each side. I smothered them with healthy, fat free, low calorie syrup and devoured them in about 5 minutes flat. These little lovely, healthy cakes are for sure one of my favorite things to eat as of late.


Well I have to run. Going to visit some lovely people for a bit. Have a wonderful Thursday night everyone! :)

Congrats on the 100th post! Those oats look absolutely incredible. And I really like that zevia flavor, too-- it's one of my favorites :) Your pancakes look delicious, too! I definitely need to make up a batch of pancakes soon :) Have a great night!

HAPPY 100th!!!!!! i am baaack. and i have missed me some babushka. glorious concoctions with the incredible edible egg in this post. both the omelet and the pancakes. nom nom nom.

woot woot 100th post! I think I am only on my 30th or something! Your egg white scramble thing looks amazing! I could eat that everyday i think!
