Friday full of YAY!

HAPPY FRIDAY! Today has been GLORIOUS! Except for the weather. It's damp, grey, rainy, cold (45) and ugly out again. But other than that, everything is spectacular. YEAH! My morning started off with a bang. I stepped on the scale and almost passed out. I was down 3.5 lbs. SO EXCITING! Which reminds me, I did not update you on my loss last Friday. I was down 1.4 last Friday. That's almost 5 lbs in two weeks.


While pondering over this amazing event, I realized how proud I was of myself. I also realized how stupid I had been for the last two years! Letting half of the weight I had lost initially creep back bit by bit, till I was unhealthy and uncomfortable again. WHY DID I LET THAT HAPPEN? The foods I'm eating now are delicious, healthy, full of good stuff and easy to make. I enjoy working out and feel so good after I leave the gym every day. Sometimes I would like the ability to kick my own ass. Pardon my French!

Okay, moving on. Breakfast today was the typical. Old fashioned oats, golden raisins, cinnamon and a little fat free vanilla pudding mix. I think this is my new favorite way of having oats. The pudding mix makes it nice and creamy. GOOD! (I was so excited to tell you about my weight loss that I forgot to take a picture. So I'm using and abusing an old photo of oats. FORGIVE ME!)


Get this! I found some old dresses for Ann to try on last night and I brought them in to work for her to try on today (oh the golden days when they still fit shall be upon us again soon), she tried this one on and LOVED IT.


So no more costume hunting. She plans to go as either Bettie Page or as a 50's housewife/pinup. I told her to go as Bettie but I don't think she liked that idea as much. FOOL! I love that woman. Miss Sexy Thang! Either way, I think I saved Ann like $50. Yep, I am THAT AMAZING!

For lunch I enjoyed yet another salad. Yesterdays was so tasty that I just had to have another. This time I used organic spring mix, chick peas, tomatoes, green onions, Melba bagel crackers, salt, pepper, red pepper flakes and spray butter. SHHHH! Don't laugh! It's good. Try it before you judge it!


Then we were off to the costume shop yet again. At least this time we were looking for something specific. Not roaming aimlessly like lost puppies. She tried on a few Bettie type wigs and decided none were working. NO idea why. Look at how sexy she looks right here. HAHAHAHAHA!


Then we were off to Target so she could get some bold red lipstick and fake eyelashes. Done and DONE. I'm so excited I could squeal. Miss. Ann. If you pull this crap again next year too, I will HURT YOU! PLAN AHEAD PLEASE! ;)

For my afternoon snack I had some plain Oikos Greek yogurt again. This time I tossed in some Kashi cereal and some coco. OMG. I love this combo! TRY IT!


After work I did my usual grocery shopping and donated my kidneys at the register. GOOD GRIEF! (sigh)..... Then I drove home through the grim and grey weather, unpacked all the groceries, made a nice cup of coffee, lit some candles and sat down to relax for a bit. Ahhhhhhh. What a week!


Before I knew it, TACO SALAD TIME was upon us! I seriously love Fridays! We did the usual. Ground meat for him, Morning Star Farms grounds for me. Here is the recipe, officially, in case anyone was curious.
  • 110 grams (2 servings) Morning Star Farms grounds (frozen, out of the bag)
  • 1/2 cup black beans (or beans of choice) I used some chick peas this time too.
  • 1/4 water (to keep it moist)
  • Packet Taco Seasoning (as much as you like, I don't use very much)
  • 2 green onions, chopped
  • 1 tsp cayenne for heat
  • Cook till heated through
I toss this mixture on top of a bowl full of iceberg lettuce (Romaine would be good too), tomatoes, onions, avocado and top it with a little fat free sour cream. Sometimes I add fat free shredded cheese as well. SO GOOD!


And now I must go and catch up on my beloved So You Think You Can Dance. I'm way behind on it and I need it in my life! Goodnight everyone. Enjoy the rest of your Friday!!

Congrats on your weight loss. Good job.

I love the photos of your lunch salad.It's bedtime, but I feel like a big bowl of crispy salad.
