Halloween Routine.

Happy Saturday everyone! Today has been another full and busy day. Seems like I never get to relax anymore. What's UP with that? I got up bright and early and slapped myself awake with this lovely cup of coffee. This cup is so adorable!


I then finished the laundry I couldn't finish last night and then decided to make a veggie egg white scramble for breakfast.
  • 4 egg whites,
  • 1 green onion, chopped,
  • 1/2 small tomato, chopped,
  • 4 white mushrooms, chopped,
  • salt and pepper to taste,
I whipped this all up and cooked it in a frying pan with some Pam. Once done I tossed it all into a lite FlatOut wrap and drizzled some hot mango habanero salsa on top. Filling, tasty and spicy. I loved it.


After breakfast I cleaned myself up and met Ann at the gym at 11:00. We worked our legs and I also decided to sneak in some bicep workouts. Today WHOPPED my butt! I thought my legs were going to give out. I think it was the single leg press. Whatever it was, left me feeling weak and wobbly! I had a hard time walking down the stairs when we left. HA!

I got home and decided to have a second cup of coffee to warm up. It was another sad and dreary day outside.


While sipping on this warm deliciousness, I quickly cooked up a bag of green bean mix and made a pumpernickel, lettuce, roast beef sandwich with fat free swiss cheese to go with it. Quick and delicious! I was STARVING! It hit the spot just right.


After lunch I cleaned myself up. I was drenched. I decided to wear layers to the gym. BAD IDEA! As soon as I walked out of the bathroom I was CORNERED! You will NEVER believe this, he wanted me to yet again leave with him and go look for the final pieces to his costume. Cool and slick Mr. Nick with his cunning ways. He thinks hugs and kisses will get him everywhere. Get back damn it. GET BACK! HA!


It worked. SIGH. We were on the road less then thirty minutes later. I was suckered (trapped I tell you, trapped). Considering that Halloween is my second favorite Holiday, I'm sure growing increasingly sick of it this year. I know I panicked a bit about my costume but a few days later I changed my plan just a tad and purchased a dress instead. BIG WHOOP! POOP HAPPENS! If you can't find exactly what you're looking for, be willing to COMPROMISE! Or change the costume plans all together. Both of those things sound better than dragging me all over town for the last 3 weeks in a row to try and find exactly what you need. Especially when we've found (I've found) items that "could" easily pass for the look he wants. He's being pickier then most women when shopping. HA! Okay. I'm done. I needed to let that out.

After visiting every thrift store known to man in the area (some for the second time), we finally found a vest that would work. No coat, but a vest should suffice. It's a SWEET, black leather, over sized, horrible nightmare that ties on both sides. After this magnificent find, he called his dad to see if he managed to find the cowboy boots from the 70's that he thought he had in a closet somewhere. Sure enough, he found them. So we drove over there and he tried them on. THEY FIT! HAHAHAHA! We're finally done! However, by the time we finally meandered home it was nearing 8:00. I lovingly dove into my pajamas and made a cup of raspberry tea.


Then I started on dinner. I decided to experiment with making my own black bean burger.
  • 1 can black beans, drained and rinsed,
  • 3 tbs corn meal,
  • 1 egg white,
  • 2 green onions, chopped,
  • 2 tbs red onions,
  • 2 tbs corn,
  • salt & pepper
  • dash cayenne
  • 1 tsp oregano
  • 1 tsp cumin
  • 1 tsp garlic powder
I rinsed and drained the beans, added the cornmeal and mashed the heck out of them.


I then added ALL of the other ingredients.


Made two mega seized patties (I was hungry).


Cooked them in a frying pan with Pam for roughly 6-7 minutes on each side. I then topped mine with fat free cheddar cheese and his with pepper jack cheese. Since the burger was so massive, I decided to just have veggies on the side. I reheated the leftover green beans from lunch and the corn I had left over from making the burgers. Oh man, it looked and smelled so good! I swear the bun is under there, somewhere..... I think I had a brain fart when making the patties. Beans do NOT shrink like meat does. DUH!


Nick loved it and so did I. I will be making this again. Couldn't be easier and of course, it's super good for you! MM MM GOOD!

For a snack later I had my fave Luna bar. The Chocolate Peppermint Stick version. Oh man I love these things! I love them so much that I enjoyed it by candlelight. HA!

i agree, i love that mug! so gorg! love your attitude on compromising. um, those burgers are epic. end of story. have a happy sunday!
