Squashy Sunday

Hi everyone. As my WAY TOO SHORT weekend nears it's unavoidable end, I find myself wishing it was Friday night instead of Sunday night. Our morning started early with the LOUD screaming sound of violent screeching machines and chainsaws. The new neighbor next door was having his huge Maple tree trimmed back and they were trimming right outside our bedroom window. OH COME ON! It's Sunday dang it! Since I was up I decided to brew some fresh coffee and make some tasty pancakes for breakfast.
  • 3 egg whites
  • 1/2 cup old fashioned oats
  • 1/3 cup cracked wheat
  • 3 packets splenda
  • LOTS of cinnamon
  • 1 tsp baking powder
  • 1 ripe banana
  • 1/2 cup water (give or take, to make it smooth enough to pour)
I mixed all of these ingredients in a blender, preheated my largest frying pan, sprayed it with Pam and made three nice and tasty (dense and delicious) pancakes. I topped it with more cinnamon and some fat free, low calorie syrup. It must have been the wheat bran that made it tasty a bit nutty. I loved it!!


After breakfast I curled up with the gang on the couch. Look at how cute they are. It was cold in here today. No idea why. I have the heat on and set to 70!!


I was due at my Mamas' by 2:00. I decided to make an all veggie, healthy, low calorie and fat free lunch since I had a pretty dense breakfast. I decided to make a dish with spaghetti squash. This stuff is so easy to make. You stab a few holes in it with a sharp knife and microwave it for roughly 12 minutes. Once the knife goes in and out without any trouble, it's done. Make sure you let it cool before cutting it.


Cut it in half, scoop out the seeds and then with a fork, scrape out the squash. VOILA! Fake, healthy, low calorie noodles. :)


I cooked up some mushrooms, green peppers and coleslaw mix to have with the squash and packed everything up because it was time to get going. I also made a quick "dressing" of sorts with fat free plain yogurt, salt, pepper, red pepper and spray butter. Not bad.


When I got to their house, I tossed it all together. It smelled so good! Pretty presentation no? I was a bit upset. I over nuked the squash a bit. It was ever so slightly mushy. Still had great flavor though!


The visit was fun, of course. We caught up, discussed our weeks, work, food, how the diets were going, and then played some games. AHHH. Sunday's are so relaxing! I also tried on the hospital gown my mama got for me from work. Uhm, we may have a problem here. It ties sort of on the side and my ass and back become somewhat exposed with just a bit of movement. I'll be drinking that night (not driving, YAY) and will probably be doing quite a bit of "movement". Not a good idea. I don't need anything popping out if you know what I mean! HA! I may need to invest in some pajama pants and a cheap t'shirt or something. Not sure I would be comfy in just some white tights under it. That just seems like a DISASTER waiting to happen!

When i got home I relaxed for a bit and caught up with some Blog reading before trying to come up with what to have for dinner. I brought some deep fried goodness home from my Mama for Nick again so I only had to make dinner for myself. I didn't think he would want it today but I should have known better. He LOVES anything with breading that gets a dip in hot oil goodness. SWEET! I was feeling lazy.... So I decided to have some Kashi Honey Puffs cereal. I haven't had cereal in MONTHS. I jazzed it up by adding a banana, grapes (is that weird?) golden raisins, dried cranberries and cinnamon.


Of course I had it with vanilla Almond Breeze. MMMMMM. It hit the spot perfectly!
